Mediterranean Salmon
Serves: 4
Preparation time: 5 minutes Cooking time: 30 minutes
Ingredients:
2 potatoes, thinly sliced
1 eggplant, thinly sliced
2 tbsp olive oil
Dried oregano
4 salmon fillets (wild-caught salmon is higher in beneficial omega-3 fats).
3 garlic cloves, minced
1 punnet of cherry tomatoes, halved
1/2 red onion, diced
Feta cheese, crumbled
Pitted olives
Method:
Preheat oven to 180°C. Lightly grease a baking dish. Add potato and eggplant slices to the base of the dish. Drizzle with olive oil and season with oregano. Bake for 20 minutes.
After 20 minutes, remove dish from oven and add salmon fillets. Drizzle with olive oil and top with cherry tomatoes, onion, feta and olives. Bake for a further 12-5 minutes.
Serve with salad or steamed greens.
