Loaded Capsicums

Serves: 4

Cooking time: 15 minutes

Ingredients

  • 2 tbsps olive oil 

  • 1 onion, diced

  • 3 garlic cloves, diced

  • 500g mince (or substitute black beans)

  • 1/2 cup water

  • Mingle ‘Spicy Mexican’ blend (available at Coles and Woolworths in the spices aisle)

  • 4 capsicums

  • 1 cup frozen cauliflower rice

  • Rice, cooked to serve

  • Coriander, grated cheese and greek yoghurt to serve 

Method

  1. Preheat oven to 180°C. Line a baking tray with baking paper. Slice top off of the capsicums and remove seeds. Place hollow side down on the baking tray and drizzle with olive oil. Roast for 15 minutes.

  2. Meanwhile, heat a frying pan on medium-high heat. Add olive oil, onion and garlic cloves and cook for 3 minutes. Add the mince and cook for around 8 minutes until mince is fully cooked.

  3. Add water and Mexican spice blend. If using black beans instead of mince add this now. Bring mixture to the boil. Then turn to low and simmer until sauce thickens.

  4. Meanwhile, cook cauliflower rice and rice according to packet instructions.

  5. Fill capsicums with a layer of rice, a layer of cauliflower rice and a layer of mince.

  6. Top with grated cheese, greek yoghurt and coriander.
