Salmon with Mango and Avocado Salsa

Not just your ordinary fish and chips. Salmon topped with mango and avocado salsa and sweet potato chips is perfect and refreshing for a warm summer evening.

Serves: 4

Preparation time 15 minutes Cooking time: 30 minutes

Ingredients:

Salmon topped with mango & avocado salsa

  • 4 pieces of salmon

  • 1 mango

  • 1 avocado

  • 1 handful of coriander

  • 1/4 red onion

  • Juice of 1 lime

  • 1 tbsp of olive oil

Sweet potato chips

  • 2 sweet potatoes

  • 1 tbsp of olive oil

  • 1 tsp garlic powder

  • 1 tsp oregano

Method

  1. Preheat oven to 180 degrees celsius. Cut the sweet potatoes into thin wedges. Drizzle with olive oil, garlic powder and oregano. Place on a tray covered in baking paper and pop into the oven. Roast for 30-40 minutes until crispy on the outside.

  2. Dice the mango and avocado into small cubes. Finely dice the coriander and red onion and add. Squeeze the juice of one lime into the bowl and combine.

  3. Heat a non-stick fry-pan to medium high heat with olive oil. Place salmon fillets skin side down on to the pan and cook for around 4 minutes each side.

  4. Serve salmon topped with the salsa and with the sweet potato chips and a side salad.
