Banana Pancakes

A quick delicious breakfast you and the kids will love. Only three simple ingredients and on the table in ten minutes. These pancakes are delicious on their own or topped with fruit, yoghurt & cinnamon.

Serves: Makes 1 pancake

Time: 10 minutes

Ingredients:

  • 1 egg

  • 1 banana, mashed

  • 1/4 cup buckwheat flour or rolled oats

  • 1 tsp of coconut oil for frying

Method

  1. Whisk egg in a bowl.

  2. Add mashed banana and buckwheat flour.

  3. Add coconut oil to fry pan and cook each pancake for 1-2 minutes on each side on medium heat (or until golden).

  4. Serve with fresh fruit, yoghurt and or nut butter.
