Savoury Breakfast Muffins

Serves: Makes 12 muffins

Preparation time: 10 minutes Cooking time: 20-25 minutes

Ingredients

  • 1 zucchini, grated

  • 2 carrots, grated

  • 1 capsicum, diced

  • 2 cups, frozen peas

  • 1/4 spring onion, diced

  • 1 cup cheddar cheese, grated

  • 4 eggs

  • 1 cup flour of choice (I used self raising)

Method

  1. Preheat oven to 180°C and line muffin tray with muffin patties.

  2. Wrap the grated zucchini and carrot in a clean piece of paper towel and squeeze all the juice out.

  3. Add the grated zucchini and carrots into a large mixing bowl along with the capsicum and peas. Add the cheese and egg and stir until combined.

  4. Add the flour to the wet ingredients and stir gently.

  5. Spoon the mixture between the 12 muffin patties. Bake for 20-25 mins.
