Red Lentil Dahl
Serves: 4
Preparation time: 10 minutes Cooking time: 20 minutes
Ingredients:
1 tsp coconut oil
1 large onion, diced
3 garlic cloves, crushed
1 tbsp ginger, grated
3 tsp curry powder/garam masala
1/2 tsp dried chilli flakes
1 cup dried red lentils, rinsed
2 cups vegetable stock
1 can (400ml) diced tomatoes
1 can (400ml) coconut milk
Juice of 1 lemon
Serve with cooked rice/naan, fresh parsley and yoghurt
Method:
Add coconut oil to saucepan over medium heat. Cook onion for 5 minutes. Add garlic and ginger and cook for another minute. Stir in spices.
Add lentils, vegetable stock, coconut milk and tomatoes. Season with salt, pepper and lemon. Simmer for 15-20 minutes until thickened.
Serve with parsley, yoghurt and rice/naan bread.
