Red Lentil Dahl

Serves: 4

Preparation time: 10 minutes Cooking time: 20 minutes

Ingredients:

  • 1 tsp coconut oil

  • 1 large onion, diced

  • 3 garlic cloves, crushed

  • 1 tbsp ginger, grated

  • 3 tsp curry powder/garam masala

  • 1/2 tsp dried chilli flakes

  • 1 cup dried red lentils, rinsed

  • 2 cups vegetable stock

  • 1 can (400ml) diced tomatoes

  • 1 can (400ml) coconut milk

  • Juice of 1 lemon

  • Serve with cooked rice/naan, fresh parsley and yoghurt

Method:

  • Add coconut oil to saucepan over medium heat. Cook onion for 5 minutes. Add garlic and ginger and cook for another minute. Stir in spices.

  • Add lentils, vegetable stock, coconut milk and tomatoes. Season with salt, pepper and lemon. Simmer for 15-20 minutes until thickened.

  • Serve with parsley, yoghurt and rice/naan bread.
