Zucchini Noodle Bolognese
Serves: 4
Ingredients:
1 onion (white), diced
3 cloves garlic, diced
2 packets zucchini spaghetti
500g lean beef mince
3 tbsp tomato paste
700g passata
2 tbsp olive oil
1 tbsp italian herbs
Salt
Pepper
Fresh parsley, chopped
Parmesan cheese
Method:
1) Heat a non-stick frypan to medium high heat and add 1 tbsp olive oil. Add onion and garlic and cook for 3 minutes or until soft.
2) Turn heat to high and add beef mince, breaking apart the mince. Cook for around 8 minutes until the mince is cooked through.
3) Add tomato paste, passata and italian herbs. Turn heat to low, season with salt and pepper and simmer for 15 minutes.
4) Meanwhile steam zucchini spaghetti in the microwave.
5) Serve bolognese sauce over zucchini noodles and top with fresh parsley and parmesan.
