Beef Burrito Bowl
Holy guacamole the flavours in this burrito bowl are to die for. This one is a crowd pleaser. So why not go all out and whip yourself up a virgin mint and lime mojito to enjoy while you’re at it?

Cooking time: 30 minutes
Ingredients:
2 tbsps olive oil
3 garlic cloves, diced
500g beef mince (or substitute black beans)
1/2 cup water
Mingle ‘Spicy Mexican’ blend (available at Coles and Woolworths in the spices aisle)
3 tomatoes, diced
1 cucumber, diced
1/2 red onion, diced
Juice of 2 limes
1 avocado
1/2 tsp of garlic powder
Spinach, roughly chopped
Black rice, cooked to serve
Coriander and greek yoghurt to serve
Method:
Heat a non-stick frying pan on medium-high heat. Add olive oil and garlic cloves and cook for 3 minutes. Add the mince and cook for around 8 minutes until mince is fully cooked.
Add water and Mexican spice blend. If using black beans instead of mince add this now. Bring mixture to the boil. Then turn to low and simmer until sauce thickens.
In a small bowl combine tomatoes, cucumber, red onion and juice of 1 lime to make salsa.
Mash avocado with remaining olive oil, lime juice and garlic powder.
Assemble your burrito bowl in 5 parts: 1 part black rice, 1 part mince (or bean) mixture, 1 part smashed avocado, 1 part tomato salsa and 1 part spinach.
Top with a dollop of greek yoghurt, a fresh wedge of lime and all the coriander your heart desires (mine desires a lot :P)
